// Hawthorn & Rose Heart Syrup
// Ingredients
16 oz water
1/4 cup dried rose petals
8 oz honey
// Directions
1. Add 1-2 oz of berries and 16 oz water to saucepan. Bring to simmer, reduce to low heat, and partially cover. Let mixture reduce to half it's volume (about 8 oz), stirring occasionally.
2. Add in rose petals and let cook over low heat for an additional 10-15 minutes, fully covered.
3. Strain herbs out of liquid and place liquid back in saucepan.
4. Add in 8 oz of honey, letting it warm (but not boil!) stirring constantly until fully incorporated.
5. Remove from heat, let cool, and bottle.
6. Refrigerate for up to 3 months.
Tips:
- Don't heat above 110 degrees Fahrenheit once you add the honey. This will break down the medicinal properties of the honey- which we don't want to do.
- Add 1/4 cup of brandy for each cup of syrup to make shelf stable.
- Take 1/2 tsp-1 tbsp about 1-3 times per day.
- I only used 1 oz of dried hawthorn berries but might add more next time for a more potent mixture.
